Chicken Salad Celery Boats

I just love this recipe as celery is probably one of the most understated vegetables in this day and age. Topped with a simple creamy salad of fish or chicken, bound with home-made mayonnaise, it’s one of life’s true little luxuries. The best part about this, is that the kids love ‘em too!

INGREDIENTS
  • 4 wide celery stalks trimmed top and bottom
  • 2 cooked chicken thighs finely chopped
  • 4 tablespoons mayonnaise
  • 1 tablespoons lemon juice plus extra if desired
  • 1 teaspoons chervil plus extra leaves for garnish
  • 1 teaspoon tarragon
  • 1 tablespoon flat-leaf parsley finely chopped
  • ½ teaspoon lemon zest finely grated
  • 2 tablespoons red onions finely chopped
METHOD
  • Using a vegetable peeler, peel the round part of the celery ribs so they sit flat, then cut them into 4 cm long pieces.
  • Place the remaining ingredients in a bowl and mix until combined. Season with salt and pepper to taste and add a little more lemon juice if desired.
