  • 1 cup dry white wine

  • Juice of ½ lemon

Instructions

Prepare the Veggie Paella

  1. Heat the olive oil in a large, deep skillet or paella pan over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 3–4 minutes.

  2. Add the red and yellow bell peppers, green beans, and cherry tomatoes. Cook, stirring occasionally, for about 5 minutes until the vegetables start to soften.

  3. Stir in the rice along with smoked paprika, turmeric, and dried oregano. Cook for 1–2 minutes, allowing the rice to lightly toast and the spices to release their aromas.

  4. Pour in the vegetable broth, season with salt and black pepper, and bring to a gentle boil. Reduce the heat to low and simmer uncovered for approximately 20 minutes, or until the rice is tender and most of the liquid has been absorbed. Try not to stir too much—this helps develop the signature crispy crust at the bottom.

Cook the Mussels

  1. While the paella simmers, heat olive oil in a large pot over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
