Using a pre-marinated butterflied chicken makes this recipe simple, while the fresh herbs and lemon juice keep it light, bright, and full of flavour.

Whether you’re cooking for two or a small family, this dish brings the best of Mediterranean greens and freshness to your plate.

Ingredients (Serves 2–3)

    • 1 pre-marinated Woolworths boneless butterflied chicken (approx. 400–500 g)

    • 2 tbsp olive oil

    • 1 lemon (zested and juiced)

    • 4 garlic cloves, minced

    • Optional herbs: Fresh oregano or parsley for garnish

    • Optional veggie side: baby potatoes or zucchini, roughly chopped

    • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 200°C (400°F).

  2. Place the butterflied chicken skin-side up in a roasting pan. Drizzle with olive oil.

  3. In a small bowl, whisk together olive oil, fresh lemon juice, lemon zest, and minced garlic. Brush this herbaceous mixture over the chicken for a fresh, green flavour boost.

  4. Scatter chopped green veggies like zucchini or green beans around the chicken. Drizzle with a little olive oil and season with salt and pepper.

  5. Roast uncovered for 25–30 minutes, or until the chicken reaches an internal temperature of 75°C (165°F). The skin should be golden and crispy, while the chicken stays juicy and tender.

  6. For a crispier finish, broil the chicken for 2–3 minutes, watching carefully.

  7. Remove from the oven and let the chicken rest for 5–10 minutes. Garnish with chopped fresh parsley and oregano before serving.
